The inspiration for this talk came to us while digging up ancient food remains in our archaeological excavations in the Negev Desert of southern Israel. For us dry and desiccated food leftovers are the stuff of life, and conceal ancient knowledge that had been lost for generations. Remains of hundreds of fish and shellfish and thousands of grape seeds were among the most surprising discoveries of the expedition. Other imported goods include spices and textiles, some of which were brought all the way along the Silk Road from China. These remains offer unparalleled clues to the commercial connections of the Negev Desert and its importance in international trade more than 1,500 years ago. They also unravel a story of wealth and prestige and the delicacy of Byzantine taste and cuisine.
